- Half a Sandía Fashion.
- 3 tablespoons of lemon juice.
- 2 tablespoons of lemon zest.
- 200 g of sugar.

How to make watermelon jam
Start by removing all the rind until you are left with just the flesh. If it contains seeds, remove them and cut the watermelon into small pieces to make it easier to cook.
Next, place the sugar, lemon juice, lemon zest and a few fresh mint leaves (to taste) into the blender jug.
Blend all the ingredients until you have a smooth mixture, then set aside.
Place the watermelon chunks in a saucepan and cook them for about 40 minutes. During this time, stir frequently with a wooden spoon to prevent the fruit from sticking to the bottom.
The watermelon will gradually release its juices and shrink in size. When the volume has reduced by about half, add the mixture of sugar, lemon and mint.
Stir well to combine all the ingredients, then bring the mixture to the boil.
Once it starts to boil, turn down the heat and continue cooking gently until you reach the desired consistency. It is important to keep stirring throughout this part of the process to prevent the mixture from sticking to the bottom or burning.
