Watermelon Gazpacho: Light and Refreshing

With the arrival of warmer weather and the dawn of summer, we’re updating our recipe book with fresh, light ingredients. In today’s post, we’re bringing back one of our favorite recipes that always wins: watermelon gazpacho.

Take note of the ingredients and preparation instructions. Very simple and suitable for the whole family.

Watermelon gazpacho recipe

INGREDIENTS:

  • 1 kg of our watermelon (guaranteed flavor and seedless)
  • 1/2 cucumber
  • 1 green Italian pepper
  • 4 slices of toast
  • 1 clove of garlic (optional)
  • 4 tbsp extra virgin olive oil
  • 2 tbsp wine vinegar

PREPARATION

Peel the watermelon (about half) and the cucumber (preferably without the seeds) and place all the ingredients in a blender. Blend until smooth, lump-free, and add more toasted bread if the soup is too thin for your liking. Serve chilled.
