This chocolate Calimero combines the smoothness of white chocolate with the freshness of watermelon, striking the perfect balance between sweetness and lightness.
What’s more, this chocolate Calimero is one of the creations by chef Josué Rodríguez, from Restaurante Garum, featured in the Sandía Fashion recipe book. It’s a creative dish reminiscent of a filled chocolate egg, perfect for special occasions or simply to treat yourself to something a little different. Its eye-catching presentation makes it a dessert that appeals to the eye even before you’ve tasted it.
Ingredients for making chocolate calimero
- 1 bar of white chocolate
- 4 small balloons
- 400 g watermelon
- 200 g brown sugar
- Kiwi jelly
- Orange jelly
- Peanut butter
- Blueberries and almonds (for decoration)
Preparation of the dessert
Melt the chocolate in a bain-marie, stirring gently until it has a smooth consistency. Meanwhile, inflate the small balloons, which will serve as moulds for shaping our chocolate Calimero. Once the chocolate is ready, dip the balloons into it, ensuring the surface is well coated.
Place the balloons on a tray and put them in the fridge until the chocolate has set completely. Once it has set, carefully pierce the balloon and remove it, leaving a half-shell which will form the base of our chocolate Calimero.
Meanwhile, we prepare the compote by cooking the watermelon with the brown sugar until it has a smooth, slightly thick consistency. We leave it to cool before using it.
To assemble, place a little peanut butter on the plate to secure the base, then place the chocolate shell on top. Fill the inside with the watermelon compote and decorate with the jelly, almonds and blueberries.
