Ingredients for watermelon spaghetti (serves 4)
- 250 ml of Sandía Fashion juice
- 5 grams of agar-agar
- 5 rubber tubes, 1 mm thick and 50 cm long
- 2 x 10 ml syringes
- A tin of tinned mussels
For the cream cheese
- 100 g cream cheese
- 100 ml of heavy cream
- 4 basil leaves
- Sal
- Pepper
How to prepare the recipe
Strain the Fashion watermelon juice and pour it into a saucepan. Add the agar-agar and bring to a gentle boil, stirring constantly. This step is key to achieving the right texture for the spaghetti, as it will help them retain their shape.
Next, we fill a syringe with the hot mixture and fill the rubber tubes, which we have previously placed in a bowl of very cold water or ice. We leave them to cool for a few minutes and, using another syringe, we inject air to remove the watermelon ‘spaghetti’ that has formed.
To make the cream cheese, mix the cheese, cream and basil until you have a smooth, creamy texture. Season to taste.
Finally, we plate up the dish by placing the watermelon spaghetti on the bottom, adding the cream cheese, and arranging the mussels on top. The result is a fresh, innovative dish full of contrasts that is sure to impress everyone.
