Ingredients for watermelon ice lollies (serves 4)

  • 1 cup of Fashion watermelon flesh
  • 150 ml apple juice (from a carton)
  • 2 tablespoons of whipping cream
  • 3 tablespoons of sugar
  • Green and red food colouring

Method

Cut and chop the watermelon. In a large bowl, add half a teaspoon of red food colouring and 1 tablespoon of sugar. Mix well and fill the plastic ice lolly moulds with the chopped watermelon, filling them to two-thirds of their capacity.

Place a sheet of aluminium foil over the top to act as a lid, and insert a wooden ice-cream stick, making sure it stands completely upright. Then place the moulds in the freezer until the first layer has set.

Meanwhile, mix the cream with 1 tablespoon of sugar and 50 ml of apple juice. Take the mould out of the freezer, remove the cling film, add 2 tablespoons of this cream mixture and return to the freezer.

To finish making the watermelon ice lollies, mix 100 ml of apple juice with 1 tablespoon of sugar and half a teaspoon of green food colouring. Fill the mould with this mixture and freeze until ready to turn out.
